Black Bean Stew with Halloumi

Black bean stew with halloumi

So warming and delicious.



Olive oil

2/3 garlic cloves, crushed

1 white onion

1 yellow pepper

1 green pepper

1 courgette

3 tsp tomato purée

Block of halloumi

Tin of chopped toms

Tin of black beans, rinsed

100g watercress

2 tsp chilli oil

Lemon wedges




Chop peppers and onion and fry in a little olive oil for a few mins until they start to soften. Add chopped courgette and crushed garlic and fry for another few mins. Stir in tomato purée. Add the tin of tomatoes and simmer.


Chop the halloumi into chunks and dry fry in a separate pan for a minute or 2 on each side until they are golden.


Add the beans, watercress and chilli oil to the vegetable sauce and heat through for a couple of minutes.


Serve the sauce and halloumi on top of rice and good squeeze of lemon over the top.

Makes approx 3 portions.
