Trying to swerve the winter bugs with this immune boosting recipe... 🀞🏼🀞🏼🀞🏼

Ingredients: 2 Large carrots, one red pepper, large piece of grated ginger (approx a tablespoon once grated), 2 cloves crushed garlic, tsp turmeric, a pinch of cayenne pepper (or as much as you can manage!!) 250-300ml vegetable stock. Method: chop and fry the red pepper in a little oil until soft, add garlic fry for 1 min, add the chopped carrots, ginger, turmeric, cayenne pepper and cover with the stock. Cook with a lid on until carrots are soft (approx 10mins). Take off the heat and pop in the blender or use a hand held whizzer. Serve with cream fraiche/sour cream and black pepper πŸ˜‹ Makes 2 to 3 servings. Keeps in the fridge for a few days πŸ™ŒπŸΌ
