Refined Sugar Free Banana Cake
This freezes beautifully and it’s very versatile.. try adding walnuts, pecans, raisins, dates, vanilla powder or whatever you like. Or you can keep it simple with just 6 ingredients. Great way to use up old bananas, the more ripe they are the better!
250g Self Raising Flour
1 Heaped Tsp Baking Powder
2 Large/3 Small Bananas
3 Big Squirts of Honey
Mash the bananas. Mix in the butter, honey and egg. Mix in the dry ingredients.
You can either spread the mixture between 12 muffin cases and cook at 180 for 14 mins or put the whole mixture in a greased loaf tin and cook for 45 mins. For the loaf, I cover loosely with foil half way through to prevent burning.
Best eaten hot from the oven but will freeze or keep wrapped up in the fridge for a few days!
